Mini Muffins With Your Minis
My girls and I are the type of people to continually be stuck in the kitchen. We love cooking and we love baking. I feel like we have began the most in depth conversations over food and drinks. Isn’t that how it always is when anyone is gathered in the kitchen?
It can be easy to cook for adults, but cooking and baking for my own kids is difficult. They are the toughest critics! I know that ultimately if I can please them, I count that as a huge win. Since I have created some of my own recipes, or found others that I’ve done some tweaking to, I thought I should start to share some of my kiddos favorites here on the blog, so stay tuned for some good ones.
Sneaking in Fruits and Veggies
I sneak fruits and veggies into my kids diets all the time. Not only do I sneak them in, but I have this innate desire to make it the tastiest food they’ve ever had. It can’t just be healthy, it has to taste good. If it doesn't taste good, my kids won’t eat it.
No fruit or veggie is out of the question when it comes to meals. You can add almost anything if you know the flavor will add to the dish and the texture won’t throw off the whole vibe. My kids have eaten easier options like carrots, cucumbers, and most fruit. They have also eaten the tougher options such as spinach, cauliflower, broccoli, and even beets! Trust me, they’re always blown away they’re eating their vegetables. I guess I am too!
Turning Meals Into Memories
We all love our kids! The struggle is that life goes by so quickly that it can make it difficult to set aside time to make memories. But here’s the thing; cooking food is a necessity, but allowing your children to help turns mealtime into a special memory. We can use what we are already doing to fill up our day and turn it into something fun with the kids.
Let them get out all the ingredients by themselves. Let them measure the ingredients. Let them pour it all in, and mix it up. They eventually get to the point where they fight over who gets to do what because it becomes so much fun. Not only are they making and creating what their bodies need, but they’re also creating memories that last a lifetime.
Ingredients
3/4 c. pureed spinach
2 eggs
1/4 c. oil (I use melted coconut oil)
1/2 c. unsweetened applesauce
2 c. whole wheat flour
3/4 c. sugar
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
Instructions
Preheat oven to 350 degrees and spray the mini muffin tin lightly with cooking spray.
Puree spinach. Add 3/4 c. to a blender along with vanilla, eggs, oil, and applesauce.
In large bowl, combine all dry ingredients (flour, sugar, baking powder, baking soda, and salt)
Add spinach mixture and mix thoroughly; pour evenly between the muffins.
Bake until toothpick comes out clean, about 10-12 minutes.
